30% Wholemeal 3 Grain sourdough
I use the same recipe as before but milling my rye and spelt flour changes much. It consists of 70% wheat flour, 20% fresh milled organic spelt and 10% fresh milled organic rye. Two preferments are used to create maximum flavour profiles, which are are build up during the long cold fermentation.

Sourdough Preferment A is made by a Rye Sourdough and fresh milled rye flour.

Sourdough Preferment B is made by a Wheat Lievito Madre and fresh milled spelt wholemeal flour.

Part of the wholemeal Spelt is milled in a coarser setting to provide intenser taste.

100% wholemeal 3 Grain organic sourdough
Same process and proportion but its 100% wholemeal and organic. Like above, the rye and spelt flours are home milled but the wholemeal wheat is professional milled flour with a finer texture.

Quinoa seeds are toasted and milled. This gives a stronger quinoa flavour without changing the chewing texture.


60% Wholemeal 3 Grain organic with Quinoa(flour)
Same type of dough but reduced wholemeal to 60% and milled quinoa seeds, thus you can’t see and bite on them, just taste.
The crunchy baked Quinoa on the outside are additional for decoration. Sure still adding nutrients.
