
Khorasan Wheat (Tritium turanicum) also know as the registered trademark Kamut is an ancient wheat grain, a natural variation of Durum Wheat. Not only texture and flavour are very different it also contains more protein, vitamins, minerals and amino acids than modern wheat. The crumb is more yellow-ish in colour due to Lutein, a carotenoid. Like Spelt, Khorasan Wheat was never genetically modified.
Khorasan refers to the historical region in nowadays Afghanistan and Iran. “Kamut” means “wheat” in Egyptian. Khorasan grains were “lost” but found again in an ancient Egyptian tombs and later cultivated.

This sourdough bread is made with 96% organic wholemeal Khorasan Wheat, Wheat Lievito Madre for leavening and a rye sourdough water roux for additional moisture.
