Frankenlaib – Franconia Rye – is a very traditional German rye sourdough bread with more than 75% rye, wheat and bread spices like caraway seeds. It’s not classified as a pure rye bread but a Mischbrot (Mixed-grain-bread) according to German regulations.

I’m using organic wholemeal rye and organic wheat(SFB). The sourdough is build in the salt-sour way with fresh milled organic German rye but for the main dough I use organic UK rye flour. I only add 0.6% caraway seeds so it won’t be overwhelming.
